Known in Italy as Guanciale (gwan-char-leh), this cured pork cheek is the traditional choice for classic dishes such as Carbonara. Often replaced with pancetta in the UK due to its rarity, true guanciale delivers a depth of flavour that no other cut can match.


Ingredients
Rare breed pork cheek (150g used per 100g finished product), sea salt, freshly ground black pepper, preservative (potassium nitrate), antioxidant (ascorbic acid).

Storage Instructions
Store in a cool, dry place away from direct sunlight. Once opened, refrigerate and use within 3 days. Suitable for home freezing.
Most products have a typical shelf life of 2–3 months
