Dinner ready in 30 minutes with this months star ingredient!
Ingredients:
500g Chicken breasts
1 tbsp Olive Oil
4 Garlic Cloves
200ml dbl cream
Half a lemon
50g Parmesan
A bunch of Asparagus
A handful of Cavolo Nero
500g Spaghetti
Method:
1. Season the chicken and roast for 30 mins.
2. Bring a pot of salted water to the boil and add the pasta.
3. For the sauce, add olive oil to a pan and fry the garlic. Pour in the cream and lemon juice and simmer.
4. Chop the asparagus and add to the mix for 5 minutes, then add the chopped cavolo nero until wilted.
5. Add the parmesan and season to taste. Slice the chicken and add to the sauce.
6. Add a splash of pasta water to loosen then toss the sauce with the pasta and serve.
