August means one thing for us at Cotswold Veg Box: peaches! These little bundles of juicy sunshine are the highlight of this month’s box, and honestly, they’re hard to beat. You can bite into them fresh or toss them into a salad or dessert, peaches just scream summer.

🍑 Did You Know?

Peaches are actually part of the same family as cherries and almonds! So when you’re enjoying that juicy peach, you’re sharing a little bit of nature’s family reunion.

We’re excited to share a simple yet delicious peach recipe that’s perfect for a cozy Sunday dessert after dinner.

Ingredients:

4 ripe peaches, peeled, pitted, and sliced

1 cup sugar, divided

1/2 cup butter, melted

1 cup self-raising flour

1 cup milk

1 tsp vanilla extract

1/2 tsp cinnamon (optional)

Instructions:

Preheat your oven to 180°C (350°F).

Toss the sliced peaches with 1/2 cup sugar and cinnamon (if using), then set aside.

Pour the melted butter into a baking dish.

In a bowl, mix the flour, remaining sugar, milk, and vanilla extract until smooth.

Pour the batter gently over the melted butter in the dish — don’t stir!

Spoon the peaches evenly over the batter.

Bake for 40-45 minutes until the top is golden and the batter has risen around the fruit.

Serve warm with cream or ice cream for a perfect summer dessert!
